Healthy “cookie dough” (gluten-free, dairy free)

As presented in this weeks WIAW, I prepared a healthy “cookie dough” for dessert the other day. Looking through my blog archive, I came across the Chickpeas Blondies I baked this winter and remembered how good the dough was.

Ingredients

  • 1 tin of drained chickpeas
  • 3 large tbsp of peanut butter (or any nut butter)
  • 3 tbsp of ground almond
  • 5 tbsp of maple syrup
  • 80 ml (1/2 small can) of coconut cream
  • Some vanilla extract
  • Some cinnamon
  • Chocolate chips

Instructions

Put all the ingredients minus the chocolate chips in a food processor, blend blend blend and voilà. Put in a bowl, add chocolate chips and enjoy.

Variations

I really like it chilled so pop it in the freezer on its own or with some yogurt for at least 30min beforehand. It’s also very good with some apple.
