Mini WIAW #11 inspired by Ethos Foods

I do not have time for a full WIAW today, but I nevertheless wanted to show you last night’s dinner because it was absolutely delicious. I have been saying for months now how I am making a conscious effort to eat my 5-a-day. I am also trying to eat more vegetarian dishes during the week. This latter was not really easy until I went to eat at Ethos Foods with Charlie. I had a sort of revelation there. I like vegetarian food if I have a lot of different things to tuck into. 

It’s with that in mind that I made last night’s diner in less than 10 minutes. A delicious plate of avocado, red bell pepper, couscous, fried egg, big flat mushrooms grilled with melted mozzarella and pesto on top, and sun dried tomatoes. Seriously so good.

  1. Yummmm! Let’s be veggie whenever I come to visit. I put at least one veggie day on our meal plan a week (normally two) and one fish day. It’s great. David never even notices!
